- Add leeks, onion, garlic and 2-3 tablespoons of water.
- Let them cook for 5 minutes until the leeks are soft and aromatic.
Adding spices

- After the vegetables have softened, add turmeric, freshly ground pepper, paprika and bay leaf powder. Stir well to combine the flavors and let them gently sauté for another minute.
Adding potatoes and water/soup

- Add diced potatoes.
- Pour in vegetable broth or water and stir well.
- Simmer the soup until the potatoes are soft and the flavors have blended nicely, about 25-30 minutes.
Taste adjustment

- Taste and add salt, if necessary, to taste.
Turning into cream soup

- Use a vertical blender to puree the vegetables until the whole soup becomes a fine cream. Be careful not to splash yourself because you can burn yourself, as it's hot!

- If you still feel the need, you can add a little pepper and salt to enhance the taste. Serve the soup in deep, plain dishes or garnish with a little fresh cream and finely chopped parsley for extra freshness.
